Harvest & Vinification
Grapes are harvested at night to preserve freshness. Direct press for a slightly extended time to allow for some maceration and color extraction. Static cold settling for a day then racked and fermentation starts with selected yeast. 13-15°C for fermentation that continues until wine is sugar dry. The wine is then racked off the lees and protected by sulfur (within the limits of organic certification). All done in cement and stainless-steel tanks.
