Harvest & Vinification
Each parcel of the Grand Mouton estate is hand-harvested, vinified separately and aged on its fine lees through the winter making it a true sur lie wine. All wines from the domaine use native yeasts. The wine is bottled without first being racked, which preserves a small amount of carbon dioxide in the wine.
