Organic farming with adherence to the biodynamic calendar. From the Les Combariolles vineyard in Jonquières. Vines were planted in the late 1940s. Gobelet trained. Average yield 25hl/ha.

Harvest & Vinification
All work done by gravity. Temperature controlled fermentation in stainless steel tanks. 100% destemmed. Native yeast. No SO2 until after malolactic fermentation and minimal addition at bottling. No fining or filtering. Aged 24 months in barriques and concrete eggs.
