90-92% destemmed. Five-day cold soak. Eight-day fermentation with wild yeast. 25 days total maceration. Pump over at the begining then 2 punch downs at the end of the fermentation. Malolactic fermentation over 15 months in the barrels. 100% French oak, 20% new. No filtration before bottling.
