Les Chouacheux is a walled site, located on the lowest slopes of the Côte d'Or escarpment. It lies a short distance to the west-southwest of Beaune itself, bordering Les Tuvilains to the northeast and Les Vignes Franches to the east.

Harvest & Vinification
Hand harvest. 95% destemmed. Eight days cold soak. One week fermentation with wild yeast. Two pump overs per day in the first part of fermentation then one punch down per day until completion. 100% malolactic during the barrel ageing. 100% French oak, 40% new. No filtration before bottling.
