Since appellation laws only allow Chardonnay and Pinot Blanc to be labeled as Hautes-Côtes de Nuits Blanc, this wine saw a one-day skin maceration in order to qualify as Hautes-Côtes de Nuits Rosé. In effect, the maceration is so light that this wine is better interpreted as a white with a touch of extra texture from the brief skin contact. Native yeast fermentation in 228L barrels. No racking for an entire year.
