The Cabernet Sauvignon comes from Cabardès. It's a 100-hectare estate located north of Carcassonne, at the foot of Montagne Noire with poor soils that suited to wine growing. Its typical micro-climate, in between the Atlantic Ocean and the Mediterranean, offers Cabardès the possibility to combine Bordeaux grapes (Merlot, Cabernet Sauvignon and Cabernet Franc) with Mediterranean ones (Syrah and Grenache). Average yields are 45hl/ha.

Harvest & Vinification
Harvest at optimal ripeness with complete destemming of grapes before maceration and fermentation in stainless steel vats. Temperatures are carefully controlled. After a light pressing, juices are selected before a complete malolactic fermentation.
